A risotto is nice and easy and never fails to impress the ladies.

If you're going for fancy then do pan-fried seabass fillets on a chorizo and clam risotto.

How about a nice Goulash to warm you this evening - takes about 30 mins to prep and you let it simmer for an hour and half. That's what I'm making tonight.

1lb of chuck or rump steak, cut into cubes about 3/4 inch
2tbl spoons of Paprika
1/2 tsp of Cayenne
1 pint of stock (oxo cubes will do just fine)
2 onions
2 garlic cloves
Salt to taste
1-2 tbl sps of tomato puree
350ml passata

coat the beef chunks in seasoned flour, brown in a hot heavy bottomed saucepan in batches then remove them to one side
turn heat down, put finely chopped onion and garlic in and simmer until soft (always takes about 15 mins by my reckoning
Add the beef
add the tomato puree - simmer for 3 mins
add the paprika - simmer for a minute or two
add the cayenne
add passata and stock, bring to boil, turn down and simmer for an hour

then try it and season it to taste - it will need salt for sure, might need some more paprika or cayenne, may need some thyme
put rice on

eat!

edit: oh yeah, some sour scream goes nice with it

Don't suppose you have a dairy-free recipe for my dairy-intolerant chums who are coming for dinner?

I couldn't do the rice because Mrs Grim... bought Uncle Bens Express Rice instead (t'was bloody nice, though).

Can't see why you couldn't replace both the cream and yoghurt with coconut milk, from the look of it. Probably be a little thinner, but would work.

I use jar sauces a lot, particularly when making curry or pasta on weekday evenings. I don't think it's cheating as such. Having said that, bechamel sauce is particularly easy :D

You might as well make a bechamel in the 3 hours cooking time a proper ragu will take anyway ;)

I'm using a quick (read: a bit shit) recipe that takes about an hour, and I intend to use that hour to clean and tidy the house (and to try to top it smelling of burn - fell asleep with some pasta on the hob on Sunday night and it still fucking stinks).

I have no idea how it's made, but we have (due to someones dairy intolerance) soya milk and soya cream. They work fine as substitutes (Soya milk tastes equally as rank as normal milk, soya cream tastes pretty much the same as normal cream(i.e. a bit less horrible than milk, but actually edible), and can be used in pretty much all the same places as normal cream.)

Plus, you can keep them for longer than cow dairy.

My lasagne was far nicer that I'd feared it would be (jar bechemel sauce and all).

Afterwards, my girlfriend confessed that she didn't like lasagne.

Ah, well! She was polite enough to eat it!
